There is really nothing to stop you from playing however you wish, but the rules are written assuming a 3x3 playing field is in use.
I suspect it is to remain consistent for schemes and such that have geographic elements (controlling table quarters, midline, etc.)
If the table is too big, those kinds of games could quickly become lopsided or downright boring, etc.
