The ability means what it says: Quote A Warrior's Death: When this model is reduced to 0 Wounds by an enemy Attack, this model may immediately take a (1) Attack Action against the enemy model. This Attack ignores range and LoS restrictions. After completing this Action, sacrifice this model. That means that the attack granted by A Warrior's Death targets the enemy model performing the "enemy Attack" that triggered A Warrior's Death. Not any enemy model on the board, and you don't have a choice which enemy model is targeted.
