Say a model was on two damage and gets hit with a red joker for 14, ignoring other potential modifiers how much damage gets thrown back at the attacker, 1 or 7? That leads me to believe a model can take more damage than it has wounds so I would say 7. I don't see anything else in rulebook relevant to your question... Probably deserves a FAQ.
